Potato Leek Soup

1 C butter
2 leeks (sliced)
  salt
  pepper
1 qt chicken broth
1 T cornstarch
4 C Yukon Gold Potatoes (peeled and diced)
2 C Heavy Cream

 

Preparation

  1. In a large pot over medium heat, melt the butter. Cook the leeks in the butter with salt and peper, until tender, stir frequently, about 15 minutes.

  2. Stir the cornstarch into the broth and pour the broth into the pot. Add the potatoes and bring to a boil. Season with more salt and pepper (to taste). Pour in the cream and reduce the heat and simmer at least 30 minutes, until the potatoes are tender. Season with more salt and pepper befgore serving.
